Altogusto. The grand tradition of Belluno cuisine pays homage to Tiziano

Located in the splendid backdrop the Belluno Dolomites, eight artists of the kitchen encounter one of the greatest artists of canvas.

Altogusto 2007/2008, the culinary meeting running from November to February in eight of the most renowned restaurants in the province of Belluno: Al Borgo inBelluno, Al Capriolo in Vodo in Cadore, Alle Codole in Canale dAgordo, Baita Fraina in Cortina dAmpezzo, Dolada in Plois in Pieve DAlpago, Laite in Sappada, San Lorenzo in Puos dAlpago and Tivoli in Cortina dAmpezzo.

The event, realised in colloboration with the Province of Belluno, has decided that, from this, the 4th edition, to pay homage to some of the great figures of the Veneto famed in both national and international history. And this years choice had to fall on the divine painter Tiziano Vecellio known as Titian, when his city of birth, Belluno, offers its tribute with the exhibition Titian: The Last Act.

The restaurants of Altogusto have dedicated a menu inspired by the great artist, which offers, in addition to exquisite cuisine and traditional tastes, the fascination of art, of experimentation, and of innovation.

A stimulating display of talent which demonstrates the abilities of the chefs Renato De Salvador and Flora Battiston (Al Borgo); Francesco Paonessa (Al Capriolo); Oscar Tibolla (Alle Codole); Alessandro Menardi (Baita Fraina); Riccardo De Pr (Dolada); Fabrizia Meroi (Laite); Renzo Dal Farra (Locanda San Lorenzo); Graziano Prest (Tivoli); in the five courses of the Titian menu they have created artistic combinations: not only of flavours, but also consistency, shading, form and colour.

The event Altogusto arose when the eight restaurants took it upon themsleves to become ambassadors in Italy for the Belluno region and its natural produce, promoting it through its cuisine and culinary traditions. This year, as always, the event allows the role of protagonist to the renowned native production, characterised by a traditional methodology of production and by an increased value in terms of authenticity and taste.

Thus the chef is allowed to indulge his fantasy, though without forgetting the close ties to tradition and typical local products. A special meat dish, called "Pastin", beans (particularly Lamon beans sweet corn, potatoes (from Cesiomaggiore in primis Alpago territory and Lamon lamb, Vinigo cabbage, broad beans, hulled barley, typical cheese, etc. will be the protagonists of delicious recipes letting table-companions enjoy the pleasure of taste and discovery of shapes and colours inspired by Titian in the mise en plat.
